Sustainable Transport & Food Miles

Travel is fun but our ingredients aren’t off on a holiday! So we avoid buying them air tickets because vacations are for people not food.We have a no airfreight policy because aeroplanes in particular, and transport in general, whilst sometimes exciting (for people not plants), let off a lot of greenhouse gases – not as much as livestock – but too much all the same.

We have something called our Proximity Principle which means buying things as close to home as sustainable, including our delicious local and seasonal ingredients. We love our local farmers and suppliers. We hope they love us too.

Our restaurants are in places where our team can use public transport, cycling or walking to get to work. We reuse all of our used cooking oil as biofuel, both at Otarian and beyond.

Who cares if cars and planes feel abandoned?
We certainly don’t.
In fact, the fewer cars and planes we have to use, the better.

This is just another way of showing we love life and the planet.
